Make Ahead Breakfast Parfait

Breakfast ParfaitCould you use 15 extra minutes in the morning to get everyone ready and out the door?  Here is a quick, highly nutritious, low-sugar breakfast that you can prepare the night before.

Ingredients per serving:

  • 3/4 C fruit-flavored, fat-free yogurt
  • 1/3 C oat bran
  • 1/3 C sliced peaches (fresh or from light syrup)
  • 1 Tbsp dried fruit (cranberries, raisins, whatever is the family favorite)
  • Chopped nuts (optional)
  • Graham crackers (optional)
Preparation:

Layer fruit in a plastic cup. Layer yogurt on top of fruit.  Sprinkle dried fruit on top of yogurt. Top with oat bran and nuts (optional). Serve or cover and refrigerate until morning.  Serve with graham crackers if you like.
